How to Make Good Ol’ Mexican Pork Chorizo

 TodayI…Watched my husband make Chorizo for breakfast! Yum. Yum. Yum. Hooray for another recipe from the amazing chef!

Chorizo is a term encompassing several types of pork sausage originating from the Iberian Peninsula. Chorizo can be eaten as is (sliced or in a sandwich), barbecued, fried, or simmered in apple cider or other strong alcoholic beverage such as aguardiente. It also can be used as a partial replacement for ground beef or pork. (Wikipedia) 

Every time we spend time with my husband’s side of the family…we are bound to have Chorizo. It’s kind of funny…now when we wake up, we expect to smell this delicious stuff cookin’. You can’t go wrong with a good ol’ Mexican style breakfast and these 5 simple steps!

Materials Needed: 8-12 Large Eggs, Pork Chorizo, Frying Pan, Corn or Flour Tortillas

Step 1: Carefully peel off plastic lining of Chorizo

Step 2: In a large bowl, beat 8-12 eggs depending on how "eggy" you want it.

Step 3: In a large skillet, separate and smash down the Chorizo.

Step 4: Slowly add beaten egg mixture into skillet.

Step 5: Mix thoroughly for 10-12 minutes or until eggs & Chorizo are cooked.

Viola! Serve on a bed of corn or flour tortillas, add cheese and salsa if desired, plate, & enjoy!
